Our Butchery

Our butchers really are the best on the block. The happy bunch, lead by meat magician Miles Nicholas, is always on hand to offer tips and advice and answer any questions. If you come along with a dish in mind, just chat it through with them and they can recommend the best cut for the job. Miles and the team work with the whole animal and so they can usually help with any request you might have.

Animal welfare is key and so we visit all of our meat suppliers to ensure each and every animal is a happy one. Once we are confident that the animals are well cared for we then make sure we get the best of the bunch to bring to our customers. That means we pay a premium to get the top animals and in turn help the farmer. That’s not to say our meat is expensive though – many customers have a pleasant surprise when we weigh their selected cut. And we can always recommend a cheaper cut to suit the dish you are cooking.

Exceptional Beef


We make sure that every cow we use comes from rich, lush English pastures and have plenty of room to roam free. That’s because we know that what’s best for the animal, is best for our taste buds. In every case the healthier and happier the cow, the better the beef will taste.

We have exceptional steaks and prime joints on offer and because we use the whole animal those forgotten cuts don’t slip our mind either. If you want knuckle or shin for a slow-cooked stew, or onglet for a no-fuss, flash-fry steak then we can help. There’s nothing our butchers like better than a chat about meat so just let them know what you need.

Just to make life that bit easier for you, we also make a range of burgers with our beef. These include a herby burger, a traditional burger and a rib of beef burger, all of which are great on the barbecue. Or if you are after a bit of spice then our fajita steak mix makes for a quick and easy mid-week meal.

Delicious Pork


Our pork is always free-range and always English. We are proud to support our country’s pig farmers and pay a fair price for every animal. Our pork is all sourced primarily from Suffolk and we like to stock rare breeds where possible, you’ll find Gloucester Old Spot, Saddlebacks and Tamworth in our meat cabinet.

And what better way is there to enjoy pork than in a sausage? We make our range of sausages fresh every morning and you can rest assured that there are absolutely no nasty bits inside.




Luscious Lamb


Depending on the time of year. We’ll use salt marsh and Suffolk lambs when they are the tastiest around, and then move up to the Scottish borders come the winter months to make sure our lamb is still young and tender.

We also recommend trying mutton; this darker meat requires slower cooking but has the same great taste and flavour.

We use our lamb to make a range of tasty meaty morsels, these include a lamb and mint burger – melt a slice of one of our Neal’s Yard goat’s cheeses over the top and you have the perfect posh cheeseburger; a spicy lamb sausage – we add a bit of a kick to make sure you have a bit of spice for your barbeques and lamb kebabs – another barbeque classic that we make up in the summer months.

Poultry


We stock a range of local chickens; most of our birds come from Saffron Walden and Bedford. We offer both free-range and large barn birds, both of which have high welfare standards and result in succulent, juicy meat.

Game


You can’t get more local and seasonal than game. We can get our hands on partridge, pheasant, rabbit, pigeon and grouse when the time is right. Just call ahead to make sure we have your chosen meat in stock. If you are new to game then we can also offer advice on what is best when and how to cook it.
